We’ll be busting out the grill for this one! Let’s celebrate Memorial Day (a.k.a. the unofficial start of grilling season) a month early. On the grill we’ll be making chicken inasal - a lemongrass-citrus marinated chicken. We’ll be serving with a fresh mango, tomato, and grilled eggplant salad. This dish will make it feel like the summer in no time!
